It all fits perfectly together and the baked apple adds a super delicious freshness to this easy Christmas cake.

Moist Apple Cinnamon Cake Recipe

This is definitely the best baked apple cake with pudding because German buttercream is traditionally made from pudding. But here I made the baked apple cake with vanilla pudding and spiced biscuits, which goes perfectly with this Christmas cake.

German buttercream: this is not an apple cinnamon cake with cream cheese frosting but with the best buttercream I know exists: German buttercream! How to make German buttercream? First, we’re making a custard or pudding. You can use custard powder or simply boil milk with cornstarch and sugar. When using a vanilla pod, integrate into the cooking process of the custard, if you’re using only vanilla flavor, add it after cooking.

It is important to note that the milk is first mixed with cornstarch and sugar while the remaining milk is boiled separately. Once the milk is boiling add the mixture, constantly stirring, until it thickens. You can basically say this is an easy baked apple cake with cinnamon frosting, because we’re adding the speculoos spice to the custard here. Quickly transfer to a bowl and cover the surface with cling film, in order to have no pudding skin developing. The custard should then cool down to room temperature.

This is the first step of this homemade Apple Cinnamon Cake with icing. We’re then whipping the butter, which is also at room temperature, until it becomes white. Room temperature is very important here, because when the butter is too cold or the pudding is still warm we either obtain bits of butter in the frosting or it becomes too runny. As soon as the butter is frothy, the firm pudding is added spoon by spoon and we vigorously incorporate it in between. The apples are cut into really small cubes, I used a dicer for this, that way the apple pieces are perfectly small and the same size. Put the apple pieces in a saucepan, add a few tablespoons of sugar and a bit of cinnamon and heat it up. Once it is chilled you can wrap it in cling film and store it in the freezer and take it out whenever you want. Here are the four components of the best Apple Cinnamon Cake made super easy and quick:

  • The cake batter: is made with oil, so the batter can be made within five minutes, add a little cinnamon and then this becomes the basis of this moist Apple Cinnamon Cake.
  • The buttercream: as described above, it is pretty easy to make homemade German buttercream, but it is important to ensure that the ingredients are on the right temperature! And we’re adding the speculoos spice here.
  • Gingerbread spice: consists of five components, with cinnamon at the very front, which makes up almost half of the spice mixture, followed by a quarter of ginger powder and then pinches of nutmeg, cardamom and cloves. All spices should be mixed together as powders and then you made gingerbreaed spice yourself. The speculoos spice is great for my baked apple cake, but it can be used in so many different ways, for pumpkin spice latte, for gingerbread or other winter recipes.
  • Baked apple: It is unbelievable how easy it is to make a homemade baked apple mixture and, as described above, the most important thing here is to cut the apples in very small and fine pieces, because this mixture goes into the cake, thus it should be easy to distribute. Just heat it up with cinnamon and sugar and it’s done!

Apple Cinnamon Cake Recipe

  • Preparation time: 2 hours

Ingredients

Cinnamon Cake

  • 4 eggs
  • 100g (1/2 cup) sugar
  • 1 pinch salt
  • 200g (1 3/4 cup) flour
  • 1 tsp cinnamon
  • 3 tsp baking powder
  • 70ml (1/3 cup) milk
  • 130ml (1/2 cup) oil

Spiced German Buttercream

  • 750ml (3 cups + 3tbsp) milk
  • 70g (1/2 cup) cornstarch
  • 70g (1/3 cup) sugar
  • 1 tbsp vanilla
  • spices: 1 tsp cinnamon, 1/2 tsp ginger, 1 pinch of clove, cardamom, nutmeg
  • 325g (1 1/3 cup) butter, room temperature

Baked Apple

  • 3-4 apples, 400g or 3 cups chopped
  • 1 tbsp sugar
  • 1 tbsp cinnamon

Method

Cinnamon Cake

  • Mix eggs and sugar until frothy, then stir in all other ingredients. Fill the cake batter in three baking pans a 17cm / 6.5 inches diameter, lined with baking paper. Bake at 160°C / 320°F for about 12 minutes. Take out and let cool down completely. Before the cake is stacked, it is helpful to wrap the cakes in cling film and to cool them so that they become more solid when putting the cake together.

Spiced German Buttercream

  • For the buttercream we first cook a pudding or custard by mixing some milk with cornstarch and sugar. Bring the remaining milk to a boil, then carefully add the mixture while continuously stirring. Keep stirring until it thickens. Transfer to a bowl and add the vanilla and the spices, mix and place cling film on the pudding to avoid the development of a pudding skin. Let the custard cool to room temperature.

    Whip the butter until it becomes white, add the pudding spoon by spoon and continuously mix until the perfect buttercream is obtained!

Baked Apple

  • For the baked apple, wash the apples and cut into very small pieces, heat it up in a saucepan together with the cinnamon and sugar until it becomes a solid mass and then let cool down.

Assembly

  • To assemble the cake, first take one cake and spread 1/4 of the buttercream on it. Put some of the buttercream into a piping bag to pipe a buttercream ring on the edge of the cake. Spread 1/3 of the baked apple mixture in it. Repeat this step once again. Then put the last cake on top and coat the entire cake with buttercream. Cool the cake and then decorate it by spreading the remaining baked apple mixture on top and then pipe buttercream on top using a piping nozzle. Ready to enjoy!
