Ingredients

Sponge Cake with Chocolate Shavings

  • 6 eggs, room temperature
  • 150g (3/4 cups) granulated sugar
  • 1 tsp vanille extract
  • 1 pinch salt
  • 180g (1 1/2 cups) flour
  • 30g (1/4 cup) cornstarch
  • 1 1/2 tsp baking powder
  • 100g (1/2 cup) chocolate shavings

Chocolate Covered Cookie Crumbs & Grapes

  • 300g (2 cups) seedless, green grapes
  • 150g (1 1/2 cups) chocolate chip cookie crumbs with dark chocolate chips
  • 1 tsp coconut oil
  • 100g milk chocolate
  • 150g (1 1/2 cups) chocolate chip cookies for decoration

Mascarpone Frosting

  • 500g (2 cups) mascarpone
  • 500g (2 cups) quark
  • 400g (1 2/3 cups) cream cheese, firm consistency
  • 400ml ( 1 1/2 cups) heavy cream
  • 90g (2/3 cups + 1 tbsp) powdered sugar
  • 30g (1/4 cup) stabiliser for frostings

Method

Sponge Cake with Chocolate Shavings

    1. Whip the eggs at high speed until light and fluffy. Mix together sugar and salt and add to whipped eggs on low speed. Continue whipping for 5 minutes until light and fluffy.
    2. Mix together flour, cornstarch and baking powder, sieve half of it into the egg mixture and carefully mix together with a whisk until it becomes a smooth batter. Repeat the process with the second half and add the vanilla. Make sure that no flour pockets remain at the bottom of the bowl. Next, toss the chocolate shavings in about one teaspoon of flour, and gently fold them into the batter.
    3. Line the bottom of the 17 cm / 6.5 inches baking pans with parchment paper. Bake at 180°C/356°F top/bottom heat for 20-25 minutes. Check whether the cakes are done baking with a toothpick. Leave to cool on a rack for 30 minutes, then gently take out the sponge cakes from the baking pans and let completely cool down on the rack. Wrap in cling film and place in the fridge, the next day cut 1-2 times horizontally into 4-6 equal cake layers.

Chocolate Covered Cookie Crumbs & Grapes

    1. Wash grapes and cut them in half.
    2. Break up the cookies into small pieces by hand or cut them into small pieces. Melt chocolate with coconut oil and cover the cookie crumbs in it. Spread out on a baking sheet to harden.

Mascarpone Frosting

    1. For the mascarpone frosting, ensure all ingredients are well chilled. Combine mascarpone, quark, cream cheese, heavy cream, sugar, and stabiliser in a fat-free bowl and whip until the mixture forms a firm frosting. Keep chilled until assembly. Use one half for the filling and the other half for the coating and decorations.

Assembly & Decoration

    1. Use one half of the mascarpone frosting for the filling. To assemble, place a dollop of mascarpone frosting on your cake board or cardboard, and put the first sponge layer on top. Pipe a ring of frostinbg around the edge, fill the center with more frosting, then scatter the chocolate‑coated cookie crumbs on top, followed by a layer of halved grapes. Repeat this process two to four times more, depending on how many cake layers you have, then flip the last sponge layer and place it on top.
    2. Wrap the assembled cake in cling film and fasten a cake tall cake pan around it, chill for 2–3 hours. Once set, remove the cake pan and plastic wrap, and cover the cake with the other half of the mascarpone frosting. Pipe mounds of the mascarpone frosting on the surface. Decorate with halved cookies in between the mounds and decorate with a few grapes if desired. Crumble some cookies and press lightly onto the bottom edge of the cake.
