A healthy cheesecake no bake can be so delicious! The recipe is very simple, quick to make and contains only natural ingredients which are available almost everywhere. A crunchy and yet moist base of nuts and dates with a super creamy and light layer of partially coconut milk, cashews and milk alternative. A healthy vegan cheesecake sugar-free, gluten-free, and really healthy!

Healthy Vegan Cheesecake Recipe

I’m always amazed at how easy it is to create delicious, healthy, sweet recipes, especially this no bake healthy cheesecake recipe, best of all it’s really quick and easy to make. Since it is a vegan cheesecake no bake, the crust is made super easy and quick, which has to be well cooled and then the cream layer is made. So can you make healthy cheesecake? Definitely yes especially with this easy healthy cheesecake recipe no bake.

No Bake Cheesecake Vegan

In many of my sweet and healthy recipes I restrain to use complicated recipes or very special ingredients that are almost impossible to find anywhere, so I always make sure to use as few ingredients as possible and make them as simple and accessible as possible. When we make this easy vegan cheesecake cashew is contained but no soy, because soy is not available in every supermarket, especially not in the form and consistency you want it to be.

Is there a healthy cheesecake? Yes! And it’s easy to make once figured out how to make healthy cheesecake vegan. There are a lot of sweeteners out there and sugar replacements. However, I want to keep it as natural as possible and try to use only natural sweeteners. A healthy no bake cheesecake recipe is not that difficult to make and I wanted to make it a sugar-free cheesecake recipe sweetened with dates and with stevia, both natural sweeteners and foods. There are also some cheesecake without sugar recipes which are sweetened with applesauce, but I think that it’s more difficult to incorporate taste-wise.

How to Make Healthy Cheesecake Recipe

There are two parts to the no bake cheesecake recipe, the base which consists of nuts and dates. The second part consists of the cream layer which is shortly brought to a boil and contains coconut milk and cashews thus it’s not quite a low calorie cheesecake.

Nut Base: for this vegan healthy cheesecake base we use mainly soft dates, if you can’t find any simply pour hot water over dried and pitted dates and let them soak in it for 15 minutes, afterwards they’re as soft as regular soft dates. Put the dates and nuts in a food processor and blend it until it becomes a sticky mass with very small pieces of nuts. Press the base of this vegan cheesecake recipe into a 17cm / 6.5 inch diameter baking pan, which is lined with baking paper, and put it into the freezer. This is how to make healthy cheesecake crust.

Cream layer: in order to make this no bake cheesecake vegan I’m using cashews and coconut milk, therefore it’s not really a low fat cheesecake recipe, but that’s not the problem because these fats are healthy fats. Pour hot water over the cashews and let them sit until the water has cooled down and they have become soft. Blend the cashews and firm coconut milk in a food processor for about 5 minutes until it has become a homogenous frosting.

Then shortly boil the oat milk with vegan gelatin (Agartine) according to package instructions and add the cashew-coconut mix and finally add the stevia, vanilla and lemon juice and combine. Let cool down for about 10 minutes and then pour onto the frozen base and cool for a few hours until the layer of cream has set.

For decoration, I whipped firm and chilled coconut milk and put it on the sugar-free cheesecake with a piping bag and nozzle and decorated it with cashews.   • 150g (1 cup) nuts
  • 60g (1/3 cup) soft dates, pitted

Cream Filling

  • 50g (1/3 cup) cashews
  • 350g (1 1/2 cup) coconut milk, chilled and firm
  • 500ml (2 cups) oat milk
  • 15g (1-2 tbsp) vegan gelatin, (Agartine)
  • 1/4 tsp stevia
  • 1 tbsp vanilla
  • 1 tbsp lemon juice
