The classic banana bread – so easy to make and everyone loves it. In all those beautiful cafes where they offer a couple of pastries, you’ll usually find banana bread as well. The most delicious part about it, how moist the cake is and together with those crunchy nuts it is the perfect combination. For this recipe I am only using a couple of ingredients, which turn out to such an amazing and delicious cake. You can also vary the ingredients a bit, adding some chocolate chips is always a good idea or you can also add chia and grounded flax seeds. But here I’ll show the basics of how to make the best banana bread!

Moist Banana Bread Recipe

What makes the banana bread moist? It is definitely the bananas itself as those are mashed and form a kind of puree. Here it is important to use ripe bananas, perfect to get rid of very brown or black bananas. The more ripe bananas are, the more sweetness they contain. They even develop this creamy flavor, I would even compare it to vanilla ice cream! And the riper they are, the easier to smash, hence even moister.

Another ingredient: oil. Don’t utilize butter, but oil. In this recipe I am using sunflower oil, but melted coconut or canola oil also work very well. Oil makes a huge difference in the consistency of a cake. It is much moister. Together with the eggs, which also contribute to the irresistible consistency and moistness of this cake, it is just amazing.

How to bake the banana bread is also of importance. It takes quite a while for the cake to bake, about an hour, but this is due to lower heat to keep it moist. When having the oven on low heat it evenly bakes the banana bread. If the oven would be on high heat, it would bake from the outside but still be raw from the inside. Therefore, it is always good to check with a toothpick whether the cake is well baked and not raw anymore.

Vegan Banana Bread

Replacing and substituting eggs is really easy, simply mix one tablespoon of chia seeds or ground flax seeds with three tablespoons of water. Wait a moment until it thickens and add to the cake batter. As eggs also have the effect to let cakes rise, it is important to add a bit of vinegar, when it reacts with the baking powder it results in the same as if there were eggs in the cake batter.

Easy Recipe

It literally only takes 10 minutes to make this easy banana bread recipe. You just need a few ingredients and the only effort is mashing the bananas and chopping the nuts. Other than that, just mixing all ingredients together and there it is, a beautiful banana bread. It only takes some time to be baked. Once it is done, leave the banana loaf in the cake pan and let completely cool down. It is easier to cut it when it has cooled down to room temperature, when it is hot or warm it may all fall and crumble when slicing it up.

Banana Nut Bread

A highlight for me in this recipe are the nuts. I am using walnuts, but those can be varied according to preferences, but also can be left out completely in case of allergies. It is a moist and delicious recipe, but those nuts in between bring that extra crunch and flavor to it. Adding chocolate chips is also recommendable, for all the chocolate lovers out there! I did not try it out myself with this recipe, but chocolate almost goes with anything, right? As said, this is the best banana bread recipe, very basic, so feel free to vary it and I am happy and curious to see your creations.

Best Banana Bread with Vegan Option

Ingredients

Banana Bread

  • 3 bananas, ripe
  • 2 eggs
  • 3/4 cup (150g) granulated sugar
  • 1 tsp cinnamon
  • 1 pinch salt
  • 3/4 cup (180ml) oil, (sunflower, canola, coconut)
  • 3 cup (350g) flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp water
  • 1/3 cup (50g) chopped nuts, (walnuts)

Method

Banana Bread

    1. Peel 2 bananas and mash with a fork until it becomes a puree
    2. In a bowl mix together eggs, sugar, salt and cinnamon with a whisk.
    3. Mix together flour, baking powder, baking soda and add to the sugar mixture with the water and oil.
    4. Add in the banana puree and stir until well combined
    5. Chop the nuts and add to the cake batter
    6. Layout the cake pan (10″) with parchment paper and fill in the cake batter
    7. Cut the third banana in half and place on the cake
    8. Bake for 50 minutes to an hour at 320°F (160°C), take it out, let completely cool down. Remove the cake pan and cut in slices.
