Easy Homemade Cheesecake Recipe

Nutrition is a huge and widely discussed topic these days and it affects every single person. Personally, I am convinced of a good balance in nutrition and I don’t label myself to any particular diet. I have noticed that I feel very good with a plant-based diet and when paying attention to my portion sizes. I try to avoid unhealthy conventional sugar and generally eat healthy, but I don’t put any absolute restrictions on myself. As I love to try new dishes and new foods, especially when travelling, I love to discover the culinary side of a country and I want to be free to eat whatever I want.

As said, I always try to keep a good balance. A piece of cake or a dessert now and then is really good for the soul! Sometimes, however, I have am craving for something sweet, but don’t want to consume unhealthy sugar, so this low carb cheesecake full of proteins is just the right thing.

It’s a pretty easy cheesecake recipe because it is made without a base or crust, and this homemade cheesecake contains a lot of low fat Greek yogurt. There are only a few ingredients, which are simply put into a bowl and mixed together with a whisk, the berries bring the unique taste and freshness to the recipe. This low carb cheesecake is sweetened with banana and sweeteners, for me it is important to use natural sweeteners such as honey, agave syrup or other syrups.

Gluten Free Cheesecake

There is a lot of low fat Greek yogurt in this homemade cheesecake recipe, thus it is full of proteins! The recipe is made without flour and without protein powder. I did not use conventional wheat flour here, as it contains almost no nutrients and has a lot of empty calories. There is a variety of other types of flours, such as almond meal, coconut flour, chickpea flour or oat flour, which can be utilized as healthy alternatives. However, this gluten free cheesecake does not contain any kind of flour.

Also, I did not use any protein powder here either, only natural ingredients contribute to the unique flavor of this cheesecake. I noticed that protein powder often tastes a bit unnatural, thus I am not a fan of mixing it into cake recipes, but you are welcome to add protein powder and simply mix it with cornstarch and add to the cake batter, if you desire.

Strawberry Blueberry Raspberry Cheesecake

With this low carb cheesecake, a healthy diet can be easily implemented without having to say no to delicious cakes. As this easy recipe is completely sugar free, free from conventional refined sugar, and gluten free. Additionally, it is low in calories and rich in proteins, as it contains eggs and a lot of low fat Greek yogurt. Next to all those healthy and beneficial properties of this cake, which is baked so quickly, it is super creamy and tasty.

To add some freshness and flavor to this low carb cheesecake, it can be baked with any kind of berry. Berries are super healthy and rich in vitamins! Who doesn’t love the classic strawberry or blueberry cheesecake? In this recipe I used raspberries, I even used frozen raspberries, as these are always available in the supermarket. When adding frozen berries, they should be kept frozen so that they keep their shape and do not lose all their liquid while defrosting. Here I just put the frozen berries in the cheesecake just before baking and put it straight away into the oven. Besides raspberries, strawberries, blueberries other berries also go well with this cheesecake recipe.

Low Carb Cheesecake Recipe

Ingredients

Low Carb Cheesecake

  • 3 eggs
  • 3 cup (750g) low fat Greek yogurt, (Magerquark)
  • 1 cup (250g) Greek yogurt
  • 1 banana, (ripe)
  • 3 tbsp cornstarch
  • 1 tsp baking powder
  • 3 tbsp syrup, (rice, agave, date etc)
  • 1 tbsp vanilla
  • 1/2 cup (150g) berries, (washed and diced)

Method

Low Carb Cheesecake

    1. Beat the eggs until fluffy. Add the low fat cream cheese and the Greek yoghurt in three batches. Gently stir in with a whisk until well combined.
    2. Mix together cornstarch and baking powder and add to the mixture with the syrup and sweetener.
    3. Stamp the ripe banana with a fork until it has become a puree and add to the mixture.
    4. Prepare the 9 inch (26cm) diameter cake pan with butter and flour to make it less sticky. Pour the cake batter in and place the berries into the dough.
    5. Bake for 25 minutes at 320°F (160°C). Let completely cool down. It can occur that liquid emerges in the cake pan while baking, as it is a very moist and creamy recipe.
