Chickpea in muffins? Yes, that works! These healthy oatmeal muffins contain chickpeas and are vegan. And they are really easy to make. It is basically a blender recipe, where almost everything goes into the blender and then they only need to bake. There is also no chickpea taste or whatsoever.

Chickpea Muffins Recipe
These fluffy chickpea muffins obviously contain chickpeas and it makes a big difference as they contribute to the consistency of the muffins, and add a lot of healthy aspects to the recipe. Peas are high in protein and keep you full for a longer time. They can basically be called healthy oatmeal muffins without sugar, because I am mixing oat flour into the dough and it does not contain unhealthy sugars!
No Sugar: For healthy breakfast muffins no sugar containing, we need to substitute it to still have a lovely sweet taste. These are oat healthy muffins without banana though, so banana is not a natural sweetener I am using here. I decided not to use it as the consistency would be too moist together with the chickpeas. Thus, I am using soft dates and agave syrup here. These two are totally sufficient to sweeten these healthy muffins for toddlers no sugar.

Vegan Chickpea Muffins Recipe
No Egg: Making healthy oatmeal muffins vegan is fairly easy! For this vegan chickpea muffins recipe we are substituting the egg with baking powder and vinegar and the oil can also be counted as substitute. There are also other options such as banana chickpea muffins, where banana is used to substitute an egg. For an apple chickpea muffins recipe, apple sauce can be utilized to replace the egg. There are several ways to do it, but I decided to go for this version.


These healthy oatmeal muffins vegan recipe with chickpeas can also be varied! You can make blueberry chickpea muffins chocolate with this recipe or chickpea muffins banana. All of those recipes for chickpea muffins vegan, would also stay vegan this way. To create healthy blueberry muffins, simply add some fresh blueberries to the muffin dough and place a couple on top, together with the almonds! When choosing healthy chocolate chip muffins vegan, make sure the chocolate is vegan and does not contain any dairy products.


Oat Healthy Muffins Vegan
Healthy muffins for breakfast are so delicious and really lighten up your day! Especially when this basic recipe can be upgraded as blueberry healthy muffins or chocolate healthy muffins.
Oat Flour: In order to use healthy flour I decided to go for oat flour, as I realized that this flour is the cheapest healthy flour one can get! I am not buying oat flour for this purpose, but for these healthy oatmeal muffins recipe I made it simply myself. You only need a food processor or mixer for this. Add the oat into that and process it until it becomes flour for a couple of minutes. I personally used instant or quick oats for this and literally within a minute I had perfect oat flour!


Generally when using oat flour I recommend to keep an eye on the added liquid in the recipe. Oats absorb a lot of liquid from the mixture, thus I think it cannot be replaced one to one with conventional wheat flour. When using other kinds of flours I always recommend to do some research before, to check how this particular flour type effects the mixture or dough. But for these healthy oatmeal muffins I totally recommend to use oat flour, I’ve tested it myself and it is perfect.
