I created an easy red velvet cake recipe original, which baked so fast and contains the original vanilla with a hint of chocolate red velvet flavor. Not only the flavor is the highlight, but also the red velvet cake design, as it is red, which perfectly fits to all those Valentine’s Day cake recipes. Red velvet cake designs for birthday are also perfectly fitting and definitely a good idea.

Chocolate Box Cake

  • Preparation time: 3 hours

Ingredients

Frosting

  • 2 1/2 cup (300g) cream cheese, (room temperature)
  • 1/4 cup (50g) butter, (room temperature)
  • 1/3 cup (30g) powdered sugar
  • 1 tbsp lemon juice
  • 1/3 cup (50g) dark chocolate

Red Velvet Cake

  • 1/3 cup (75g) butter, (room temperature)
  • 1/2 cup (100g) sugar
  • 1 tbsp vanilla (sugar)
  • 1 pinch salt
  • 1 egg, (room temperature)
  • 1 tsp apple vinegar
  • 1 cup (130g) flour
  • 1 tsp baking powder
  • 1 tsp dark cacao powder
  • 1/2 cup (125ml) buttermilk
  • 2 tbsp red food coloring

Strawberries & Chocolates (also for the store bought cake)

  • 1 cup (200g) strawberries
  • 7 oz (150g) chocolates
  • 1/3 cup (50g) dark chocolate
  • 1 tbsp (15g) coconut oil
  • 1/3 cup (50g) white chocolate
  • 2 cup (300g) dark chocolate

Chocolate sides & cover (lid)

  • 2 2/3 cup (400g) dark chocolate
  • 1/2 cup (100ml) heavy cream

Method

Frosting

    1. Add the cream cheese (room temperature), butter (room temperature), powdered sugar and lemon juice to a bowl and whisk only until smooth.
    2. Melt 1/3 cup (50g) of dark chocolate and quickly mix together with a little less than 1/2 of the cream cheese frosting.
    3. Cool the cream cheese frosting and the chocolate cream cheese frosting for about an hour.

Red Velvet Cake

    1. Whip the butter (room temperature) until it becomes light and fluffy, add the sugar, salt and vanilla and beat until the butter mixture becomes a bit lighter.
    2. Whip in the egg (room temperature) and mix until well combined. Mix together the flour, baking powder and cacao powder and add to the cake batter together with the apple vinegar and buttermilk.
    3. Add as much red food coloring until it becomes a nice dark red.
    4. Layout the 15x15cm (6×6 inch) squared cake pan with parchment paper and fill the cake batter and bake at 160°C (320°F) for about 25-30 minutes. Let cool down.
    5. Cut the red velvet cake once horizontal. Spread the cream cheese frosting on the red velvet cake and lay the second layer on top. Cover the cake with the chocolate cream cheese frosting. Cool the cake in the fridge.

Strawberries & Chocolates (also for the store bought cake)

    1. Wash and dry the strawberries, put them in the freezer.
    2. Meanwhile melt 1/3 cup (50g) dark chocolate and add 1 tbsp (15g) of coconut oil and the cooled strawberries in it. This way the chocolate will harden faster.
    3. Melt 1/3 cup (50g) of white chocolate, fill into a piping bag and drizzle over the strawberries and the chocolates. Cool in the fridge.

Chocolate sides & cover (lid)

    1. Measure the sides and height of your cake. According to that cut out four times the length x height (+ 1cm / 0.4 inch) parchment paper pieces. In my case: 2x 14.5cm x 5cm (4cm height + 1cm) and 2x 18cm x 5cm (4cm height + 1cm).
    2. Melt 2 2/3 cup (400g) of milk chocolate and spread about ½ of the milk chocolate on these four parchment paper pieces. Lay each parchment paper with the chocolate side on one side of the cake. Put it back into the fridge and cool.
    3. Use the remaining ¼ of the melted milk chocolate and pour hot heavy cream on it and gently mix until it becomes a perfect chocolate ganache. Pour on the cooled cake and spread it out evenly. The chocolate sides of the cake should be a bit higher than the cake itself. Let cool in the fridge. Decorate with the chocolate covered strawberries and chocolates, top with the chocolate cover.
    4. Use ¼ of the melted milk chocolate and pour hot heavy cream on it and gently mix until it becomes a perfect chocolate ganache. Pour on the cooled cake and spread it out evenly. The chocolate sides should be a bit higher than the cake itself. Let cool in the fridge.
    5. With ¼ of the milk chocolate spread out a 15x15cm (6×6 inch) square, which will be the cover of the cake, you can spread it out a bit larger and cut it afterwards. Let cool in the fridge. Use a bit of the remaining white chocolate to decorate a bow on it, let cool again.
    6. Boil water, put it in a high bowl, place a long knife in it to absorb the heat. Take the knife out of the water, dry it and cut the chocolate cover into shape, this way the chocolate will easily melt away without breaking. Cool again.

Store bought cake:

    1. Cool the cake for a couple of hours. Cut off the top. Cut a rectangle into the cake and scrape out the cake.
    2. Melt 2/3 cup (100g) of milk or dark chocolate, cover the entire cake with chocolate and let cool.
    3. Melt 1/3 cup (50g) of white chocolate, fill into a piping bag and draw a bow onto the cake top and the cake so it looks like a present. Cool in the fridge and fill with chocolates and chocolate covered strawberries.
