It is so easy to make oatmeal porridge healthy! Many people ask, ‘can you make porridge with water?’. I always nod and am a fan of healthy oatmeal recipe! It is so easy to make the porridge microwave recipe or just using hot water for instant porridge.

First, we should clarify how do you make porridge? The porridge ingredients are essential here. For the instant porridge, we need either instant oats or quick cooking oats. This way we can just use hot water or put the oatmeal in the microwave. The instant and quick cook oats, are oats that are softer and smaller, thus they don’t need a lot of heat or a lot of liquid to become soft. Rolled oats, steel cut oats, oat bran, oat groats and Scottish oats are not suitable for this recipe.

What to put in oatmeal? I have a couple of favorite recipes, such as banana chocolate porridge, peanut butter porridge or apple cinnamon oatmeal. Ingredients

Pineapple Coconut Porridge

  • 1 cup (200g) pineapples
  • 1 tbsp syrup (vegan) or honey
  • 1 tsp cinnamon
  • 1/3 cup (35g) instant or quick oats
  • 2 tbsp (15g) fruit muesli , (sugar free)
  • 1 tsp each chia seeds, ground flax seeds, wheat bran, (optional)
  • 2 tbsp (10g) desiccated coconut
  • 1/3 cup (100ml) hot water
  • 2 tbsp (30g) solid coconut milk
  • 2 tbsp coconut chips, (optional)

Method

Pineapple Coconut Porridge

    1. Cut the pineapple into small pieces. Heat up the syrup or honey in a sauce pan and add the pineapple pieces to it, sprinkle with cinnamon and let caramelize
    2. Add the oats or oatmeal (chia seeds, ground flax seeds, wheat bran if available), fruit muesli, shredded coconut in a bowl, pour hot water over it and stir until well combined. Let it sit for 1 minute, add the coconut milk and mix again
    3. Add the caramelized pineapple pieces and mix into the porridge, decorate with coconut chips (optional)
