This Christmas Wreath Cake recipe is really easy to make, even though it looks a bit more elaborate. There’s no special equipment needed, just a bundt cake pan, green food coloring and a piping bag and piping nozzle. That’s all! This Wreath Cake recipe consists of a juicy, nutty chocolate cake covered with German vanilla buttercream, which is colored green. Then we only need to decorate the Christmas wreath bundt cake with Christmas cookies and sprinkles.

Chocolate cake: I decided to go with a delicious nutty chocolate cake, because it fits well into the  Christmas theme and chocolate is simply delicious. For the chocolate cake a very simple cake batter with oil, cocoa powder and ground hazelnuts is mixed together.

This combination brings a Nutella taste to this chocolate Christmas Wreath Cake taste. There’s no special Christmas Wreath Cake pan needed, we’re using a bundt cake pan here, important to grease it well and sprinkle it with flour, so that the cake pan can easily be removed once it cooled down. This Wreath Cake design is made very simple because we’re baking the cake in a bundt cake pan and then it only needs to be decorated.

German buttercream: together with the chocolate Christmas Bundt Cake flavors we’re adding the best buttercream I know exists: German buttercream! How to make German buttercream? First, we’re making a custard or pudding. You can use custard powder or simply boil milk with cornstarch and sugar. When using a vanilla pod, integrate into the cooking process of the custard, if you’re using only vanilla flavor, add it after cooking.

It is important to note that the milk is first mixed with cornstarch and sugar while the remaining milk is boiled separately. Once the milk is boiling add the mixture, constantly stirring, until it thickens. Quickly transfer to a bowl and cover the surface with cling film, in order to have no pudding skin developing. The custard should then cool down to room temperature.

We’re then whipping the butter, which is also at room temperature, until it becomes white. Room temperature is very important here, because when the butter is too cold or the pudding is still warm we either obtain bits of butter in the frosting or it becomes too runny. As soon as the butter is frothy, the firm pudding is added spoon by spoon and we vigorously incorporate it in between. Then the buttercream is colored in green and this is how to make a Christmas Wreath Cake design.

How to decorate a Christmas Wreath Cake? This is an easy Wreath Cake decorating, even though it looks more difficult. Let me tell you, it’s not, because it can be made with regular baking utensils. We need a bundt cake pan, a piping bag and piping nozzle and green food coloring. These are the essentials that are needed to create one of this easy Christmas Bundt Cake decorating ideas.

Decorating: As soon as the chocolate cake is baked and the buttercream is colored, the fun of easy Christmas Wreath Cake decorating ideas begins! But how to decorate a Christmas Bundt Cake? We’re using a star nozzle and piping bag to pipe circles on the cake. Very important, slowly pipe circles from the inside out, so that they look like roses. With a little space in between the green roses I piped one layer of green roses and then a second layer by simply covering the holes, so that no chocolate cake can be seen anymore.

Ingredients

Chocolate Cake

  • 3 eggs
  • 75g (1/3 cup + 1 tbsp) sugar
  • 1 pinch salt
  • 1 tsp vanilla
  • 75g (1/2 cup) flour
  • 60g (1/2 cup) ground hazelnuts
  • 15g (2 tbsp) dark cocoa powder
  • 3 tsp baking powder
  • 75ml (1/3 cup) oil
  • 50ml (1/2 cup) milk

German buttercream

  • 250ml (1 cup) milk
  • 25g (3 tbsp) cornstarch
  • 25g (2 tbsp) sugar
  • 1 tsp vanilla
  • 125g (1/2 cup + 1 tbsp) butter, room temperature

Decorations

  • star-shaped cookies
  • red & green sprinkles
  • green food coloring

Method

Chocolate Cake

  • For the chocolate cake, combine all the ingredients with the whisk for a few minutes or mix together in a kitchen machine for 2 minutes. Grease the bundt cake pan and sprinkle generously with flour, spread the cake batter in it and bake at 160°C / 320°F for about 15-20 minutes, check if completely baked with a tooth pick. The cake has to cool down completely before it can be removed from the cake pan.

German buttercream

  • For the buttercream we first cook a pudding or custard by mixing some milk with cornstarch, sugar and vanilla. Bring the remaining milk to a boil, then carefully add the mixture while continuously stirring. Keep stirring until it thickens. Place cling film on the pudding to avoid the development of a pudding skin. Let the custard cool to room temperature.

    Whip the butter until it becomes white, add the pudding spoon by spoon and continuously mix until the perfect buttercream is obtained! Now add the green food coloring until you obtain a nice and strong green color.

Decoration

  • Fill the buttercream in a piping bag with a star nozzle and now pipe green roses on the chocolate cake, the best way to do this is to start piping a swirl or circle from the inside out, cover the cake with one layer of roses, there will be some free spaces in between the roses. This is then covered with a second layer of green roses. As soon as everything is well covered and it already looks like a Christmas Wreath, you can start decorating with the fondant stars, red and white sugar sprinkles as you like. Best to serve the cake at room temperature (and not chilled).
