We’re then whipping the butter, which is also at room temperature, until it becomes white. Room temperature is very important here, because when the butter is too cold or the pudding is still warm we either obtain bits of butter in the frosting or it becomes too runny. As soon as the butter is frothy, the firm pudding is added spoon by spoon and we vigorously incorporate it in between.
