Valentine’s Day Cake – Flower Box Cake Tutorial – Lotus Biscoff Cake and Frosting

This Valentine’s Day cake in style of this Flower Box Cake is a truly unique gift! If you’ve already seen the infinity flowerbox then you’ll recognize this hat box flower cake as well. The taste is insanely delicious as well; an easy lotus biscoff cake recipe consisting of moist cake layers including biscoff cookies, a buttercream with the lotus biscoff spread and even more lotus cookies for the crunchiness! A thin layer of chocolate represents the cake flower bouquet box and for the flowers I’ve used colored Russian frosting. It’s a bit of an effort, but totally worthwhile for the taste and especially as a Happy Valentine Day cake or as a Happy Mothers Day Cake.

How to make a Flower Box Cake – Italian Meringue Frosting

I’m showing you how to make a Mother’s Day Cake in just a few steps! There are many flower cake box cake designs, but for this one I used an Italian Meringue frosting which works best for this cake bouquet box. This frosting consists mainly of egg white and sugar, but it’s really easy to make, it is very important though to follow the steps precisely in order to have the piped flowers stay firm.

Egg white, sugar, gelling or jam sugar and water are required for this frosting. Bring water with equal parts sugar and jam sugar to a boil and measure the temperature with a thermometer. At 110°C / 230°F you can start whipping the egg whites and once sugar syrup is at 120°C / 248°F the egg whites should have stiff peaks, then slowly add the sugar syrup while stirring the egg whites. Continue whipping the frosting until it becomes meringue and has come down to room temperature.

This frosting is perfect for piping flowers and for this Valentine’s Day cake decorating ideas, as it was partially made with gelling or jam sugar and therefore it remains perfectly firm. The last step is to add food coloring to the frosting.

Flower Box Cake Ideas – Chocolate Border

There are plenty Valentine’s Day Cake recipes out there, but this one is truly unique and actually easy to make because no fondant is required, instead dark chocolate and parchment paper. First, the finished Flower Cake Box should be chilled. For the chocolate border measure the height from bottom to the beginning of the dome, because the roses are on the dome and there we won’t need the chocolate border.

Cut a strip of parchment paper for the measured height, in my case it was 12cm / 4.7 inch. Place this strip on another large piece of parchment paper to prevent everything from getting dirty then evenly spread out the melted chocolate on it. Carefully pick up the parchment paper strip and place it around the cooled cake and smoothen it out.

This is how we create the best Valentine Day cake design. To finalize the Valentine’s Day Cake boxes style I cut out another small strip of parchment paper, repeated the last step and placed it to the bottom so that it looks like the lid of the flower cake box.

This is definitely one of the best Valentine day cake ideas. The next step is to spread the crushed cookies on top and repeating this step several times.

For this Mothers Day cake decorations we’re creating a dome, cut the last two cake layers into smaller circles, then cover the cake with the remaining buttercream. I’m telling you, one of the best Happy Mother’s Day cake recipes! Before continuing with the chocolate border, important to cool the cake well. Once the chocolate borders are done we’re piping the flowers on the dome as in many Mother’s Day cake ideas. And then it’s ready to be enjoyed!

Flower Cake Box Recipe

  • Preparation time: 4 hours

Ingredients

Lotus Biscoff Cake

  • 6 eggs, (room temperature)
  • 150g (3/4 cup) sugar
  • 1 pinch salt
  • 300g (2 1/2 cup) flour
  • 150g (1 cup) Lotus Biscoff cookies
  • 3 tsp baking powder
  • 180ml (3/4 cup) milk
  • 150ml (2/3 cup) oil

Lotus Biscoff Buttercream

  • 400g (4 cups) cream cheese, (room temperature)
  • 500g (2 1/4 cups) butter, (room temperature)
  • 150g (1 cup + 3 tbsp) powdered sugar
  • 150g 2/3 cup Lotus Biscoff spread / cookie butter
  • 100g 1 cup Lotus Biscoff cookies

Decoration & Italian Meringue

  • 400g (3 cups) dark chocolate
  • 60ml (1/4 cup) water
  • 90g (1/2 cup) sugar
  • 90g (1/2 cup) gelling or jam sugar
  • 2 egg whites
  • food coloring , pink, orange, yellow, green

Method

Lotus Biscoff Cake

  • Whip eggs and sugar until fluffy. Separately, finely grind the Lotus Biscoff cookies in a food processor, add in together with all other ingredients. Spread out the cake batter in 17cm / 6.5 inch diameter baking pans lined with parchment paper. I baked the batter in 7 different baking pans, but you can bake these in 3 or 4 baking pans and then cut the cake layers horizontally in half. Bake at 160°C / 320°F for approx. 12 minutes (or longer with 3-4 baking tins). Take out and let cool completely cool down. Before stacking the cake, it’s helpful to wrap the cake layers in cling film and cool them, this will make them firm and easier to assemble.

Lotus Biscoff Buttercream

  • For the buttercream, simply mix all the ingredients (on room temperature!) together until it has become a homogeneous frosting. It is important that all ingredients are at room temperature!

    To assemble the cake, first take a cake layer, spread some buttercream on it and sprinkle a tablespoon of crumbled Lotus Biscoff cookies on top. Repeat this step 5 times. Cut the last two cake bases into 15cm / 6 inch and 13cm / 5 inch diameters. Continue building the cake in the same way as before and then cover the entire cake with buttercream. Cool the cake.

Decoration & Italian Meringue

  • Measure the height of the cake from the bottom to the beginning of the dome for the chocolate border, it was 12cm / 4.7 inch height in my case. Cut a strip 60cm /23.5 inch x 12cm / 4.7 inch (or your cake’s height) parchment paper. Put this strip on another large piece of parchment paper so that everything’s stays clean. Melt the chocolate carefully and evenly spread on it. Carefully pick up the parchment paper strip and place it around the cooled cake and smoothen it out. Continue cooling the cake. Repeat the same process for the small chocolate border, but with the dimensions 60cm / 23.5 inch x 3cm / 1 inch.

    For the Italian meringue, bring the water with the sugar and gelling or jam sugar to a medium boil and measure the temperature with a thermometer. At 110°C / 230°F you can start whipping the egg whites and once sugar syrup is at 120°C / 248°F the egg whites should have stiff peaks, then slowly add the sugar syrup while stirring the egg whites. Continue whipping the frosting until it becomes meringue and has come down to room temperature.

    Color the Italian meringue with different food colorings of your preference, I used pink, orange, yellow and green. I then piped the roses and flowers on the dome using different nozzles. The beautiful cake is ready! Additionally, I attached a satin ribbon to the right and left of the cake so that it looks more like an infinity flower box.
