Small Wedding Cake Elegant Romantic – Kinder Bueno Frosting

I baked this small wedding cake for my own civil wedding and it was a beautiful wedding cake elegant romantic with real flowers. We had a small celebration for our civil wedding so I decided to go with this simple wedding cake recipe which is basically a Kinder Bueno cake recipe. Inside this wedding cake white hide some fluffy chocolate sponge cakes with a simple Kinder Bueno cake frosting and crushed Kinder Bueno pieces.

How to make a Small Wedding Cake

For this simple small wedding cake recipe there is not much needed and it is better comparable to a regular celebration cake. We first need to decide on the size, flavor and look. I immediately had white small wedding cake ideas in mind and love this elegant small wedding cake designs. With my husband we decided very quickly to go for a Nutella Kinder Bueno cake recipe as he loves Kinder Bueno and I also think it is very delicious! 

First we need to make the frostings. I had a chocolate Kinder Bueno cake frosting for the inside and a Swiss meringue buttercream for the outside. And on the inside chocolate sponge cakes, which just fit perfectly to the Kinder Bueno frosting. I usually make them a day ahead so they can sit overnight to become firm and ready to be spread on the cake. The chocolate sponge cakes should also be done a day beforehand, so they can cool, be cut and I like to pop them in the freezer, this way it becomes very easy to frost and stack the tiny wedding cake.

On the next day I spread all the frostings and fillings, stack the cake, crumb coat it and then we can start the decorating part, the part I most love! How to make a small wedding cake 1 tier is super simple, there is no stabilization needed. Just stacking the cake as usual.


Simple White Wedding Cake Designs

I had many thoughts on the wedding cake designs and the wedding cake decorating as there are so many: wedding cake boho, wedding cake vintage, wedding cake naked cake etc. This wedding cake would be in the small wedding cakes section so I decided for a white wedding cake elegant romantic style. It has a Swiss meringue buttercream on the outside and I just decorated it with a spatula to create this pattern. And these small simple wedding cakes with flowers are just super cute and in my opinion always beautiful. To make a wedding cake small and simple is very easy as well! One tier simple wedding cakes for small wedding are the perfect size.

Kinder Bueno Cake Recipe

This is definitely a chocolate wedding cake as it contains chocolate sponge cakes, a delicious birthday Kinder Bueno cake frosting with Nutella and actual Kinder chocolate and crushed Kinder Bueno pieces. And the best part is that this wedding cake tutorial is very easy as it is a rustic wedding cake and here it is all about simplicity. For our wedding cake flavors we need:

  • Kinder Bueno Frosting: it is basically a Kinder Bueno cream cheese frosting. The day before we make a ganache with Kinder chocolate and heavy cream. Then we whip and stabilize heavy cream and fold in cream cheese. Here we add the Kinder chocolate ganache and Nutella. Once this is piped on the different cake layers we add crushed Kinder Bueno on top!
  • Chocolate Sponge Cakes: these are regular chocolate sponge cakes and you can use any recipe suitable.
  • Swiss Meringue Buttercream: very important as we will created this wedding cake unique look with it, to make the wedding cake look simple and rustic. When containing a wedding cake chocolate flavor but you want to have it white, it is very important to first crumb coat it, a thin layer of frosting, cool it and then add a thick layer of the buttercream. This is for the traditional wedding cake white.
  • Flowers: for our small rustic wedding cake flowers I just took leftovers from my flower bouquet. I didn’t want to use wedding cake toppers, they can also look very beautiful, but I just wanted to have flowers on top of the small wedding cake and I put some at the bottom as well. To make the wedding cake rustic style it is also important to choose the matching flowers, and arrange them in a wild way.

Kinder Bueno Cake

  • 3x sponge cake, 10inch / 26cm diameter
  • 1 cup (200g) Kinder Riegel chocolate
  • 3/4 cup (200ml) heavy cream
  • 2 cups (500ml) heavy cream
  • 2 tbsp (2 packs) stiffener
  • 1 tbsp (1 pack) vanilla (sugar)
  • 3 1/2 cups (900g) cream cheese
  • 1 cup (200g) Nutella
  • 16 tsp (8 leaves) gelatin
  • 2 packs (400g) Kinder Bueno

Swiss Meringue Buttercream

  • 8-9 (1 cup + 1 or 300g) egg whites
  • 2 1/2 cups (500g) sugar
  • 1/2 tsp salt
  • 3 1/2 cup (850g) butter, (room temperature)

Kinder Bueno Cream Cheese Frosting

    1. Cut the Kinder Riegel chocolate into pieces, heat up 3/4 cup (200ml) of the heavy cream and put the chocolate in it and stir until it melts. Transfer to a bowl and mix until no pieces are left in the ganache. Cover surface with cling film and cool for a day or a night. Then whip up until it is a nice frosting.
    2. In a fat-free bowl (wipe out the bowl and wisk with vinegar) fill in the the remaining 2 cups (500ml) of heavy cream together with vanilla sugar (with cream stiffener) and cream cheese until it is perfect whipped cream cheese frosting. Do the dummy test by holding it the bowl with the whipped cream upside down above your head. If it falls out it’s not perfectly whipped.
    3. Gently mix in the Nutella and the Kinder Riegel frosting and add gelatin according to package instructions into the mixture. Cool for at least 4 hours.
    4. Cut the Kinder Bueno into small pieces and later on add on each layer.

Swiss Meringue Buttercream

    1. In a fat-free bowl (wipe out the bowl and whisk with vinegar) add the egg whites and sugar. Place over a saucepan, which is half filled with boiling water. Let the bowl be warmed by it and continuously whisk the egg whites until all the sugar dissolves and it becomes a frothy texture.
    2. Now beat the egg whites on high speed with a standing mixer until it is room temperature and perfectly whipped meringue. This can take up to 10 minutes. Once it is room temperature add the butter bit by bit, approx. 1 tbsp big pieces.
    3. Add gelatin according to package instructions into the mixture.
    4. Before using it, let it come down to room temperature. Stir it with a whisk and it’s ready to use.

Assembly & Decoration

    1. Cut the 3 chocolate sponge cakes horizontally to have 5-6 similar cake layers.
    2. Decide which of the five layers is the bottom and the top of the layer.
    3. Put some frosting as glue on the cake board and place the bottom layer on it.
    4. On the bottom layer which is on the cake board and the other three, fill a piping bag with the Swiss meringue buttercream and pipe a circle on the borders. After that, divide the fillings in four and fill each of the four layers with the frosting and sprinkle the other fillings on top.
    5. Stack the layers on each other. The fifth cake layer without any frosting goes on top.
    6. Coating: frost with the Swiss meringue buttercream using a spatula and icing scraper. Take a small spatula, place in hot water, dry it and then go around the cake, placing the top of the spatula on it to create this look.
    7. Flower decoration: place flowers and greens on top and the bottom.

      Hallo liebe Lily,
      Ja die Torte muss auf jeden Fall gekühlt werden. 2-4 Tage im Kühlschrank. Sonst kann man die super einfrieren indem man alles luftdicht mit Frischhaltefolie umwickelt.
