The perfect gift is this recipe for Mother’s Day Cake – a vanilla strawberry cake. First of all, this cake contains moist vanilla cake layers and a fresh strawberry buttercream, which contains two thirds of strawberries and only a little butter. Thus, it tastes really fresh and berry-like. Secondly, this homemade strawberry cake design looks stunning. It is a so called ‘Meta Cake’ which means it is cake on cake on cake.

How to make Mother’s Day Cake Design

For this vanilla cake with strawberry filling, I decided to turn it into a beautiful Mother’s Day Cake recipe with this Meta Cake design. Meta Cakes are cakes on cakes on cakes, therefore this tiny cake and the cupcake on top. It looks really cute, and it is really fun to make this little cake! And the best part, it is easy to make and one of the simple Mothers Day cake ideas without fondant.

How to make Mother’s Day Cake topper? For this meta cake design we need small cakes and cupcakes for the topping. Therefore, I baked three additional vanilla muffins, next to the vanilla cake layers. For the small cake on top, I stacked two of these muffins with the strawberry cake filling in between and around and created this little cake. It is definitely recommendable to cool the muffins beforehand for an easy assembly. The third muffin is used to make a cupcake out of it. Additionally you can have a tiny muffin as well and turn it into a cupcake with the strawberry buttercream.

After preparing the Mother’s Day cake design it’s time for the arrangement. I’m showing you how to decorate Mother’s Day cake ideas. First, cover the cake with a layer of white chocolate ganache, then place the small cake and cupcake on it. With the remaining strawberry buttercream you can create the happy Mothers Day cake decorations by piping the buttercream, placing some strawberries in between and lastly adding some white sugar pearls.

Vanilla Cake with Strawberry Filling

For this easy strawberry cake recipe we’re whipping up a batch of delicious moist vanilla cake. Important to keep the ingredients on room temperature before using them. In a bowl mix together eggs with sugar and salt, this can be done by hand with a whisk, you don’t necessarily need to use a standing mixer. Mix flour and baking powder together and add this to the egg mixture together with milk and oil. Combine the cake batter and first fill three muffin papers in a muffin mold with about two tablespoons of the batter. bake at 160°C / 320°F for approx. 13 minutes.

Now it’s time for the most amazing strawberry cake from scratch! Divide the cake batter in three 16cm / 6.5 inch diameter baking pans lined with parchment paper. Bake at 160°C / 320°F for approx. 20 minutes. Take out and let cool completely cool down. Before stacking the cake, it’s helpful to wrap the cake layers in cling film and cool them, this will make them firm and easier to assemble.

Easy Strawberry Cake Recipe

How to make strawberry cake homemade is super easy with this recipe. For the buttercream you can use fresh or frozen strawberries, doesn’t make a difference. Once strawberries are on room temperature, put them to a blender and finely puree the strawberries for this fresh strawberry cake. Pour almost all of the strawberry puree into a pot and bring to a boil while constantly stirring to prevent from burning. 

Mix the remaining strawberry puree with sugar and cornstarch. Once the puree starts boiling add the mixture and continue stirring with a whisk until it thickens, remove from heat and add gelatin according to package instructions. Transfer to a bowl and cover the surface with cling film and let cool down to room temperature. For this vanilla strawberry cake filling whip the butter (room temperature) until light and fluffy and add the firm strawberry puree spoon by spoon until obtaining a beautiful strawberry buttercream. Now you can start assembling the cake.

Can strawberry cake be left out? You should certainly cool the cake when not eaten, but very important to let the strawberry cake get to room temperature before serving, because buttercream enfolds its full flavor on room temperature.

Can strawberry cake be frozen? Almost all cakes can be frozen, but I don’t recommend to freeze buttercream, as it will affect the texture and can get soggy after defreezing.

Will strawberry filling make cake soggy? In this case the strawberry filling won’t make the cake soggy because it is a strawberry buttercream which obtains its texture, therefore you can store this cake several days in the fridge.

Ingredients

Vanilla Cake

  • 6 eggs, (room temperature)
  • 150g (3/4 cup) sugar
  • 1 pinch salt
  • 1 tbsp vanilla
  • 250g (2 cups) flour
  • 3 tsp baking powder
  • 100ml (1/3 cup + 3 tbsp) milk
  • 190ml (3/4 cup) vegetable oil

Strawberry Buttercream

  • 800g (5 cups) strawberries, frozen or fresh (room temperature)
  • 140g (3/4 cup) sugar
  • 100g (3/4 cup) cornstarch
  • 4 leaves (8 tsp) (vegan) gelatin
  • 380g (1 3/4 cup) butter, (room temperature)

Decorations

  • 300g (2 cups) fresh strawberries
  • 100g (1/2 cup) white chocolate
  • white sugar pearls

Method

Strawberry Buttercream

Assembly

  • To assemble the cake, first take one cake layer and spread 1/6 of the strawberry buttercream on it and spread. Repeat this step once again. Then spread 2/6 of the buttercream around the cake, coat the entire cake. Take a cake smoother to obtain smooth sides and top and cool. For the small cake stack the two muffins with some buttercream in between and cover the small cake the with strawberry buttercream. Fill remaining buttercream into a piping bag and pipe some buttercream on the tiny cake and the third muffin.

Decorations

  • Prepare the fresh strawberries by washing, drying and cutting them. Carefully melt the white chocolate and spread a thin layer on top of the cooled cake. Place the tiny cake and cupcake on top and use the remaining buttercream, using various piping nozzles to create beautiful decorations with the strawberries in between. Lastly decorate with some white sugar pearls.
